Doesn’t get easier than this! Put all ingredients in one pot (the chicken, pasta, parsley, pumpkin) and 10 minutes later you have a beautiful, creamy fall meal! If you’re a vegetarian, take out the chicken and use spinach or broccoli!

Basically, it’s fall in a bowl.

Use brown rice pasta, whole wheat pasta or brown rice to make this meal SUPER healthy – or even gluten free!! Serve with some chopped parsley, cracked pepper and parmesan cheese. Enough for the whole family, or make a smaller, one person meal!
