Throw all of these ingredients in one pot, cook for 15 minutes and before you can even finish setting the table, you will have a beautiful, protein packed quinoa and chickpea salad! If you’re vegetarian, eat lots of it, and if you’re not, use as a side dish and add some chicken or salmon! So delicious and SIMPLE!

Written recipe:

1 cup uncooked quinoa
2 cups water
1/2 tsp salt
1/2 tsp pepper
6 oz tomato paste
1/2 cup cilantro
2 tbl lemon juice
1 tbl lemon zest
1 1/2 cup diced bell pepper
2 cups chickpeas
