PUMPKIN PASTA
This one pot pumpkin pasta is our favorite go to fall comfort food! SO easy to make, this pumpkin pasta will be ready within just 15 minutes, and it’s ALL MADE IN ONE POT! Yes, that’s right, which means only one pot to clean! 🙂 Your whole family will love this one pot pumpkin pasta, it’s kid approved! To avoid over indulging, you can make this with just two servings, or a full pound of pasta if you’re serving more than two people! Did we mention it’s a ONE POT MEAL?! 🙂

HOW TO STORE/REHEAT THESE

Best eaten right when cooked. You can put in the fridge and reheat in a covered saute pan, but you may need to add a few splashes of water.

Ingredients to make 2 servings (as I did in the video):
120g brown rice pasta (or whatever healthy pasta you prefer)
1 tbls olive oil
1 sprig rosemary
2 cups water
1/2 tsp salt
1/4 tsp nutmeg
1/2 cup pumpkin puree (make sure the only ingredient in the canned puree, is pumpkin)

Ingredients to make a full pound of pasta:
1 tbls olive oil
2 sprigs of rosemary
1 pound healthy pasta of your choice
4 cups water
1 tsp salt
1 tsp nutmeg
1 1/4 cups pumpkin puree
